Sliced peppercorn crusted Ahi (yellowfin) tuna steaks with Wasabi sauce, rice with snow peas, Romaine lettuce salad with Feta cheese, cherry tomatoes and sliced avocado.

My daughter in law is a damn fine cook.

I lived in Kona on the Big Island of Hawaii for 1 1/2 years - Kona, besides being the home of the Iron Man triathlon, is very big for sport fishing

when folks charter boats for fishing the Captain of the boat usually will take whatever fish the sportsman will "give up" in exchange for reducing the price of the charter.....the Captain in turn sells the fish to local restaurants (for a profit, of course)

I ate A LOT of that-day-caught Ahi and other fish

Fired up the il New Braunfels smoker and tossed on some Fajitas. Smoked um for a couple hours.
Charro beans with onion and cheese. Pico on top served as a steak warm tortillas on the side.

got a "hankerin'" for Jalapeno Poppers yesterday, found a good recipe, got the fixin's and wound up making 30 halves, half of which I cooked (the other half I'll cook this evening)

cleaned halves filled with creamed cheese then wrapped with 1/2 slice of bacon

Wife loved 'em, I loved 'em and we ate them in lieu of having anything else for dinner

made a Chicken, Rice, Green Bean casserole yesterday - very tasty but made too much for 1 person - shudda made a 1/2 recipe

(would give some to the Dogs as a treat but it's got Onions in it and that's a "no no")

Inside was a 5lb whole chicken and some ears of corn.

Smoked about 6 or so hrs.

Tasty.

Added a package of Knorrs chicken rice as well

MM good.

got the ingredients to make Chicken Marsala, which I will put together, but I've been hungry for a good Hamburger so I just finished making a batch of my Teriyaki Sauce, in which I'll marinate the Hamburger Patty - then when ready to put on a Bun and eat I'll add Cheese, Tomato and I've also got a couple of "just ripe" Avocados - so will add slices of one of 'em

have some packaged Curly Fries which I may, or may not fix  (?)

also picked up a 1/2 dozen Peaches at the market - will peel those, then slice 'em, put 'em in a bowl and sprinkle some white Sugar over the top and let 'em chill in the fridge - love me some fresh Peaches

have the "hefty" (1/2lb plus) marinating in my Teriyaki for tonight's Burger

but, while it's doing so, I went ahead and make the Chicken Marsala (I always have a bottle of Marsala in the fridge) - I used the most simple recipe that I could find and I believe that it's as good as any Marsala dish I've ever had in any restaurant (my 1st time making it myself)

almost swapped the Burger for the Chicken for tonight's dinner.....but will have the Chicken manana night   :th_thicon_idea:

Picked these up in Castroville today on my way back to SA from Uvalde.

Gonna toss um in a a hot arse iron skillet and fry um up.
