Nice pot roast in the crock pot with all the fixins tonight.

Nato, I do love a good pot roast with carrots, potatoes, onions and mushrooms. served along with some fresh green beans cooked in butter, lard and some bacon slices, and some fresh yeast rolls. Mmmm sounds good!  :th_thicon_idea:

Last night we had burritos with chili gravy, shredded lettuce, tomatoes, onions, shredded cheese, along with some refried beans, nachos, chips and salsa. I gave that roll of Tums a workout!  :wave1:

I made Fish Tacos a couple of nights ago - I broil the defrosted Frozen Cod filets in a bit of Olive Oil and Agave - all the fixins' that go with it plus Spanish Rice and refried Black Beans - we have those quite often

tonight I pan fried a Ham Steak and right at the end I baste it with a paste of Brown Sugar and Yellow Mustard - had (boxed) Mac Cheese then Cottage Cheese on the side

(have enough Ham leftover to use it with Eggs for breakfast manana..)

Tango, what is your method or secret for cooking fish for fish tacos? I tried some frozen Cod fillets last year, and broiled them in the oven, using a little cumin, cilantro and salt and pepper for seasoning. But I didn't really care for the texture or the flavor.

very simple here.....defrost the Cod, add about 1 tablespoon of EVOO for each piece of Cod and I "roll" each piece in the oil to cover, then drizzle Agave and a bit of Sea Salt over each - (broil 1 side then turn and broil the other) when they've broiled I split them lengthwise down the middle, giving 4 pieces = 4 Tacos (2 each person)

I use the Wild Caught Cod filets, individually wrapped, from Sam's Club - always have a package of 'em in the freezer

I've got a "breakfast recipe" sitting out that I'm going to make today.....it's a Casserole.....ingredients are 2 Ham Steaks but I'm using 2 lb Pork Sausage, 2 Sweet Onions, 3 oz Baby Spinach, 6 Eggs, 2 cups Milk, Dijon Mustard, 6 oz Fontina Cheese and 3-4 English Muffins

all solid items are chopped, torn, beaten or shredded - Ham and Onion are sautéed -Muffin pieces go at the bottom of an 8 1/2 x 11 casserole dish - other ingreds (1/2 the cheese) mixed and poured over Muffin pieces - chilled in fridge overnight - baked at 375 for 30 min - add 1/2 half of Cheese and bake additional 30 min

enough for the 2 of us for 3, or so, breakfasts

The wife and I do breakfast for dinner occasionally. Sometimes an omelette, loaded down with cheese, onions, bell peppers, chorizo, and salsa. Sometimes, scrambled eggs, biscuits, gravy hash browns and sausage. Sometimes, pancakes with bacon and lots of maple syrup.

How long do you broil them for? Mine came out sort of soggy in the middle, almost like they weren't done. I put them back in for another 10 minutes or so, but still they were sort of soft and soggy inside. Not flaky like I wanted.

don't know how long I broil 'em - the change in color is what I look for, also when the Agave starts to turn very dark (almost burns) that tells me "it's time"

by the way, that "breakfast casserole" that I mentioned above will be tonight's dinner - it's all prepared so the only "fixin'" I've gotta do is bake, add Salsa and eat

Sorry Bud but it's all gone as it wasn't a big one.
Tonight tho we had grilled boneless pork chops with mashed potatoes and sliced carrots. :)

made up 1 package of boxed Turkey Stuffing (to which I added a couple of other ingredients) and made a couple of cups worth of Poultry Gravy

Wife made another great Salad - had just 1 helping and there's enough leftover for another couple of meals

very tasty (and I didn't feel obligated to express my thanks for anything)

Man that sounds good! One of my favorite meals is poultry, dressing and my wife's butter beans.

Wife is gone to visit her sister so I've been batching it the last few days. Bought a nice NY strip, going to fry up some eggs and hash browns tonight.

The wife found some really nice looking center-cut pork chops, a little over an inch thick, that I'm going to grill outdoors. Must be a stuffing sort of night! She is fixing some stuffing to go with the chops, and she made a nice pea and macaroni salad to got with the baked potatoes I'm cooking as well.
