I love Liver and Onions (or, perhaps it's some sort of Iron deficiency..) but I hate cooking it (slimy obnoxious hunks of innards)

so, when I get the urge, there's a little country restaurant up in Quitman that always has it on their menu
Never cooked it myself but I've eaten plenty of it in my life. Wife does the bacon first then cooks the liver and Texas sweet red onions in the bacon grease. MMMMM

Had Homemade spaghetti.
From my Mom.
She makes large pot of it and freezes it in portion bags.
Of course when I visit she “forces” me to take some.

Of course I oblige her and it comes in super handy when your just not feeling the cooking vib.


Oh and homemade donuts as well she makes and freezes them in 1/2 dz bags.
Thaw them out and just like fresh made.

Those are for breakfast today.

have a lot of frozen LARGE Argentine Shrimp (that we bought at Sam's Club) - yesterday got on the Food Network's website looking for an interesting Shrimp/Pasta recipe - found one, made it last evening and it's SO good that I want to share and recommend mucho - give it a try, you'll love it (this makes enough for 4 people (or 2 meals for my Wife and I)

For dinner tonight, my wife is making leftover.

She is the only person I know of that makes leftovers  from scratch with fresh ingredients  only.
A well balanced breakfast, being necessary to the health of the nation, the right of the people to keep an eat cereal shall not be infringed.  Now who gets the ceral, the breakfast or the people?
Sure I'll shoot your Glock.  Just hang it with the rest of the targets.

Well, I snacked on leftovers today for lunch! But tonight the wife said she was going to make a chicken, rice and broccoli casserole for dinner.

I made "Mexican Pizzas."

Basically, pizzas made on corn tortillas, and then I cook them in the oven to make the round, corn tortilla crispy

I have no idea as to what we might have for dinner tonight. Got plenty of room in the fridge though. Usually on Saturday or Sunday evenings, I clean all the weeks leftovers out of the fridge and the dogs get Scrap Night! I mix all the old leftovers with their dog food and some broth and they love it!

Does your wife have a name for that gawd awful concoction?
My mother was originally from the UK and was big on beets. She used to make all kinds of wretched dishes with beets. After my mother passed my father told me that when they were first married she made a meal with beets in a casserole or something that he didn't care for but didn't want to hurt her feelings and told her he really enjoyed it. So he ate beets and in turn so did his children.
Occasionally, when I go to the outdoor range, I pick up a few big beet bulbs and shoot the hell out of them.

by the way - on tonight's menu is left-over Pasta/Shrimp (the recipe for which I posted here earlier) and some of that good pre-made Texas Toast Garlic Bread - and my Wife told me today that we've got A LOT of that good Gumbo in the fridge (for manana) (then I'll freeze the rest in individual serving sized freezer bags)

That was not experimentation, it was attempted murder!

Another example is how she times hard boiled eggs.  they're done when they explode.  Not kidding, she's done that several times.  Then there was the time she burned the hot water.  It was on the stve merrily boiling ant when next she checked it, it was all gone and the aluminum  pot had melted. I   think she kept it as a souvenir.

Now, mostly, I do the cooking in self-defense.

a couple of good nights for supper :  last night to the Red Dome restaurant - they always have Liver and Onions, Brown Gravy, Smashed Taters  (and Cole Slaw) which I ordered (perhaps I get an occasional Iron deficiency ?) - anyway, it was very good, as always

I knocked off Mowing early today (3pm - start of my Cocktail hour) so that I could shower then make BBQ (Catsup based sauce) Chicken Legs (my favorite part of the Chicken) - Mashed Garlic Taters and Baked Beans - I'm just about to start.....

life is good (and so will be Supper).....

by the way, those Taters are pre-made/packaged Bob Evans' brand - they're better than anything I can make - and I like Sour Cream on 'em

Last night, we had some oven-roasted chicken leg quarters, potato salad, corn, dinner rolls and ranch-style beans for dinner. It was pretty good stuff!

Tonight, depending upon how much or if it's still raining, sort of planning on steaks cooked on the grill, baked potatoes, garlic bread, and a green salad.
